We all know it’s important to get your veggies and it has never been easier with these delicious and easy-to-make zucchini fries! Serve them alongside a lean burger or on their own for a crowd-pleasing appetizer.

Yield: ~50 fries

Ingredients:

4 medium Zucchini
2 egg whites
½ cup two percent milk
½ cup grated parmesan cheese
1 cup Panko Japanese breadcrumbs
¼ Tbsp each paprika, garlic powder & onion powder

Preparation:

Preheat oven to 425°F.  Place a cooling rack on top of a baking sheet and spray cooling rack with non-stick spray. Cut zucchini into 4 inch strips. In a small bowl, whisk egg whites and milk. In a separate bowl, combine parmesan, Panko and seasonings. Dip zucchini sticks into egg mixture, then breadcrumb mixture. Place on cooling rack and bake 30 minutes or until golden brown.

75 calories
3g fat (1g saturated)
11g carbohydrate (2g fiber)
4g protein
